It's back! Affectionately known as 'Truffle Hound', this is UZ's early-released, approachable, and most risotto-coded expression of Barbera & Nebbiolo. They pull out crazy aromatics from these sibling varieties. With Barbera's almost-tanninless soft profile, terrific colour, and bombastic fruit, it dovetails perfectly with the herbal, floral, mushroomy savouriness and cat's tongue grip of Nebbiolo. The outcome is this perfectly acid-stitched pairing partner for a host of dishes. Find meaty, truffle-tinted, bright plum tang with that hint of rose and tea. It's a jaunt into umami-like refreshment — think of the great Italian amaro tradition and you'll key into its medicinal, amaro-like fennel and cardamom spice. The palate is as juicy as it is lively with terrific pucker and a bright yet savoury finish. Here while it lasts!
