Varietal/Blend:  50% Grenache, 30% Syrah, 20% Mourvèdre

Fermentation:  48-hour pre-ferment cold maceration followed by a traditional fermentation in concrete with at 16° to 27°C. Délestage, remontage, or pigeage occurs each day for 6 weeks according to what Denis feels necessary. No SO2 used/added during winemaking.

Ageing:  Aged in concrete 10 months. Small addition of sulphites at time of bottling.

Vineyard & Vine Age:  Hand harvested. Organic. From a vineyard sitting just north of Cairanne located on the left bank of the Rhône, facing the Dentelles de Montmirail and Mont Ventoux. Stony clay-limestone hillsides, on gentle slopes well exposed to the sun. Erosion has cut into the mass of limestone gravel with a rare flint alternating with marl.

ABV:  15.0%
