Ageing:  Aged in concrete vats and neutral French oak. No inputs but for sulphur in limited quantities (>40mg/L). Unfined, unfiltered. Bottled on a fruit day.

Vineyard & Vine Age:  Estate vineyards. Biodynamic since 2000. Vines averaging 50 years of age. Only 25hl/ha yield. Double Guyot pruning. Spontaneous winter grassing. Soil work in spring. Treatments combining Bordeaux mixture in small quantities with herbal teas from plants such as horsetail and nettle. Bottled on a fruit day.
