Château Peybonhomme-les-Tours

This 'new vineyard' was situated among the estates centuries-old holdings and for several generations the family attempted to purchase the parcel to complete their vineyard such that it would be one contiguous plot. After three generations they succeeded in purchasing the vines and to commemorate this, they've fermented and bottled the site as its own cuvée, the 'Nouvelle Vigne'. This is the new Bordeaux! Where else would you find a single parcel wine that is a co-ferment of both varieties therein, 50/50 Cab Franc and Merlot? This beautiful, medium bodied and classically structured wine offers a tangy fresh rush of leafy herbs, pomegranate, cranberry, white peach, bell pepper, and black tea with enticing complexity with a food friendly build.

Fermentation:  Co-fermented in cement. Fermented whole-berry with indigenous yeasts. Gentle extraction with punch downs for cap management. Minimal use of sulphites.

Ageing:  Aged in cement. Bottled with minimal SO2. Unfined and unfiltered.

Vineyard & Vine Age:  Estate vineyards. Biodynamic since 2000. Double Guyot pruning. Spontaneous winter grassing.
Soil work in spring. Treatments combining Bordeaux mixture in small quantities with herbal teas from plants such as horsetail and nettle. 30 Hl/Ha yield. Vines are an average of 30+ years of age. Bottled on a fruit day.
