2021 Blaye Côtes de Bordeaux AOC Quintessence de Peybonhomme

From Peybonhomme-les-Tours' oldest vines and best plots comes this limited cuvée of Rachel's most classically cut right bank wine boasting Blaye's tell-tale terroir. Here in Blaye where fresh black fruit with terrific structure and iced tea freshness converge in the glass, the quintessence captures they happily thoughtful qualities of this place with all the density, medium body (only 12.5% abv!), and lift of a bygone age. Find black plum, fresh date, mace, and stewed rhubarb over an herbaceous palate stitched with orange pekoe tea and cut grass leading to a red currant finish. That touch of new oak rounding out the bright black fruit begs for braised meats or a classic bavette or a Sunday lunch of sautéed mushroom toast. An extremely versatile pairing wine. Drink from 2024 to 2034, ideally at 15-18ºC with a 30-60 minute decant.

tillage in spring. Hand harvested. Bottled on a fruit day.
