Château Peybonhomme-les-Tours

A generous, plush, easy-drinking rendition of the right bank's signature darling: Merlot. This wine shows that careful, biodynamic farming brings great fruit into the winery and great fruit does not always need big oak and heavy extraction to deliver on the promise of great wine. A gentle maceration and slow fermentation followed by a short winter's élevage in concrete serves up a red-fruited, moreish Merlot packed with raspberry compôte, red plum purée, and red currant jam. This is an honest style of varietal merlot we all hope to encounter more often. A bistro wine par excellence.

Ageing:  Aged six months in concrete. Less than 25ppm SO2. Unfined and unfiltered.

Vineyard & Vine Age:  Estate vineyards. Biodynamic since 2000. Double Guyot pruning. Spontaneous winter grassing.
Soil work in spring. Treatments combining Bordeaux mixture in small quantities with herbal teas from plants such as horsetail and nettle. 30 hl/ha yield. Bottled on a fruit day.

ABV:  14.5%
