Blanc de Noirs Brut Nature

Domaine Tissot

A fascinating wine in that the first ferment of this 100% Pinot Noir pressed white takes place in top quality French oak barriques, 1/3 of which are new oak. The ferments are natural as usual, with maturation in the barrel being on the lees, unfined and unfiltered, without additions. I would have loved to taste this vibrant white Pinot Noir before it was brought to the bottle for its second fermentation! The second fermentation then delivers us this wild take on a Blanc de Noirs, tactile and excitingly unique, nuanced by that signature TLR, giving hazelnutty and fenugreek depth. There is no dosage nor added SO2, yet the wine is rich and balanced and perfectly sound. The nose is spicy, spicy, spicy, with the fruit profile giving apple and pear and orange peel and wild berry. The palate ranges from rich pear to zesty cherry skins, superbly finessed. It's a dense and sinuous wine with superb minerality that lingers long after every sip.
