Macvin is one of those beguiling, off-beat styles of the Jura that makes wine come alive all over again. It is a Chardonnay & Savagnin based dessert wine that has been fortified with Marc, the French version of Grappa, a distillate of the re-fermentation of the grape skins left over from wine making (Piquette). The wine must then be aged in oak for at least six years before release. Just imagine a wine of this kind in the hands of Stéphane Tissot. It is a rare treat, a curio that will end any meal with panache and fireworks. It bursts with candied orange peel, baked apricots, marjoram, and baking spices, its sweetness balanced beautifully by the Jura's signature saline tang and statuesque acidity.
